Ingredients

Cupcakes

  • 1 Nyina Vanilla Sponge Mix
  • 3 large eggs
  • 200g soft unsalted butter
  • 1 cupcake tin
  • 12-16 cupcake cases
  • 1 bottle of Tesco multicoloured heart sprinkles

Buttercream

  • 400g Icing sugar (sieved)
  • 200g unsalted butter (softened)
  • 1 piping bag
  • 1 drop of pink food colouring (add more to get the colour you wish)

 

 

Method

Cupcakes

Preheat the oven to 200C/180C for fan-assisted ovens. Grease and line the base of two 20cm (8 inch) round cake tins with greaseproof paper.


Place the cake mix, butter and eggs into a bowl. Beat together with an electric whisk for 30 secs. Stop, scrape down the bowl and mix for a further 30 secs.

Line a 12 holed cupcake tin with paper cases. Divide the batter between the 12-16 cupcake cases, filling three-quarters full. Bake for 14-16 mins until risen and lightly golden in colour or till a metal skewer comes out clean.

Transfer to a cooling rack and leaving to cool completely before decorating. 

 

Buttercream
Cut your butter into blocks.

In a bowl, add your icing sugar, butter, vanilla and food colouring.

Mix until light and fluffy.

Add the buttercream into the piping bag and cut about 1cm from the end.

Pipe in a circular motion and sprinkle with the love hearts.
